For those of us who do not have the patience to roll sushi!
1 cup sushi rice, 4 spring onions, 1 cup cucumber stalks, 1 cup carrot stalks, 2 avacados, 2-3 nori sheets, 75g salmon, 1/4 cup soy sauce, 1/2 teaspoon grated ginger, 2 teaspons sugar, wasabi.
Cook the rice as per the packet instructions including adding the rice wine vinegar and sugar (you could use apple cidar vinegar as a substitute). Cut up the cucumber, carrots, spring onions and avacado. Cut up the nori sheets into little squares. Cut up the salmon into bite sized pieces. When the rice is completely cooled add in the vegetables, nori and salmon. Make a dressing by mixing together the soy sauce, ginger and sugar. Add as much wasabi as you like to the dressing and mix well. Add the dressing to the salad when you are ready to serve. Toss well and add salt and pepper to taste. Enjoy!
