Made with whatever is in the fridge/freezer for a quick delicious meal!


500g chicken breast cut into small pieces, 500g sliced mushrooms, 1 chopped onion, 2 tablespoons each tomato and hot sauce, 1 tablespoon worcestershire sauce, salt, pepper, 1 teaspoon each thyme and crushed garlic, 5 large pancakes (use my pancake recipe but leave out the vanilla essence and add a little salt), 1 litre cheese sauce (recipe previously posted).

Fry the onion until browned. Add the chicken and salt, pepper, thyme and garlic. Cook until the chicken is tender, then add the tomato and hot sauces. Add the mushrooms and cook until the mushrooms are done. While the chicken is cooking make the pancakes and set aside. Then place some chicken filling on a flat pancake and roll it up. Place it in a buttered oven proof dish. Fill each pancake and place them close together in the dish. Pour the cheese sauce over the pancakes and sprinkle over some grated cheese. Bake in the oven at 180 degrees celsius for 30 minutes. Enjoy with a green salad! You could use whatever vegetables you have - carrots, brocolli etc. And you can spice the chicken with your favourite spices. Right now Sriracha sauce is my favourite! Enjoy!
