Quick and easy!
250g soft butter, 150g castor sugar, 1 egg yolk, 2 teaspoons vanilla essence, 1/4 teaspoon almond essence, 1/2 teaspoon salt, 300g flour, jam, icing sugar.
Beat together the butter and sugar. Add the egg and essence and beat well. Sift together the flour and salt and add gradually to the mixture. You might use less or more flour depending on the weather so add enough flour to make a soft dough. Wrap the dough in clingwrap and refrigerate for 45 minutes. Then roll out the dough and cut into shapes. Cut out a hole in one of the shapes. So if you have 20 biscuits then cut a hole in 10 of them. This is so when you jam them together you will see the jam peeping through! I used the lid of the essence bottle to cut out the holes! ( see photos). Place the biscuits on a greased baking tray and bake at 180degrees celsius for 10-15 minutes. Let the biscuits cool and place some jam on the uncut biscuit and cover with the cut out biscuit. Using a sieve, dust some icing sugar over the biscuits. Enjoy!
