5 Spice Prawns
Ready in 20 minutes!
500g prawns (headless and deveined), 250g sliced mushrooms, 2 carrots sliced, 5 spring onions chopped, 1 teaspoon grated ginger, 2 teaspoons crushed garlic, 1 teaspoon each 5 spice and chilli powders, 1 green chilli, 2 tablespoons soy sauce.
Place the prawns in a bowl and add the 5 spice and chilli powder with a little salt. Add 1 teaspoon of the crushed garlic and mix well together. Set aside. Place a little oil in a wok on medium high heat. Add the ginger and the rest of the garlic and the green chilli and cook for a minute. Add the prawns and the spring onions, reserving some spring onion for garnish. Cook for 3-4 minutes until the prawns are done. Remove the prawns from the wok and set aside. Add a little more oil to the wok and fry the mushrooms and carrots until cooked. Then add back the prawns and soy sauce. Cook for a minute and taste for seasoning. Add some salt if needed. Garnish with the spring onions and serve with rice or noodles. Enjoy!
