My apologies for being away for so long. I have had many requests for more vegetarian dishes so here is my first of hopefully many more to come.
500g fresh spinach, 300g feta, 1 chopped onion, 3 green chillies, 2 teaspoons crushed garlic, 1 teaspoon salt, 4 sheets phyllo pastry, melted butter.
Wash and chop up the spinach. In a little olive oil fry the onions and chillies until lightly browned. Add the crushed garlic and cook for a minute. Add the spinach and salt and cook for 10-15 minutes until the spinach is tender. Set aside to cool for 10 minutes. Cut the feta into small squares and add to the spinach. Toss carefully - do not break up the feta. Prepare the phyllo sheets by spreading each one with melted butter and laying them on top of each other. I decided to make one large rustic looking pie but you could make individual ones as well. Place the phyllo sheets on a baking tray and place the spinach mixture in the centre of the pastry. Then fold over the ends and seal with some melted butter. Brush the top with melted butter. Sprinkle over some crushed black pepper and bake at 200degrees celsius until the pastry turns a golden brown. Serve warm. Enjoy!
