Pastry Log

I have done this with Pavlova and Meringue and decided to try Puff Pastry. Delicious and so much easier!

Ingredients

400g roll of puff pastry, 250ml fresh cream, 500ml custard, fruit, chopped pecans.

Cut the pastry into two pieces lengthwise. Place on a baking sheet, brush with beaten egg, and score the edges. Bake at 200degress celsius until puffed and browned. Set aside to cool. Make the custard or if you are in a hurry like me, use store bought custard and add vanilla instant pudding powder to the custard to thicken it. Whisk in the powder until it's all blended in and the custard is smooth. Do this just before you add it to the pastry as it sets very quickly. Place the cooled pastry pieces on a board to make one long log. Spread the custard over the pastry leaving the scored edge bare. Beat the cream with a tablespoon of sugar and 1/2 a teaspoon of vanilla essence. Spread the cream over the custard. Top with your favourite fruit. I used strawberries and kiwi as I wanted a Xmas theme. Sprinkle over the pecan nuts. Place in the fridge until ready to serve. Slice with a very sharp knife. Enjoy!
