Mushroom Pies

Another tasty treat for Vegetarians!


Puff pastry, 400g chopped mushrooms, 1 chopped onion, 1 chopped red pepper, 1 chopped green chilli, 1 teaspoon crushed garlic, 50g each butter and flour, 400ml milk, 1/2 cup grated cheese.

Fry the onions, pepper and chili in a little olive oil for a few minutes. Then add the mushrooms and garlic. Season with salt and pepper. Cook until the mushrooms are done. Make a cheese sauce by frying the flour in the melted butter for a minute. Add the milk and continue whisking until the sauce thickens. Remove from the heat and add the cheese and stir until it melts into the sauce. Season with salt and pepper. Add the sauce to the mushroom mixture and stir well. Set aside to cool completely and then place in the fridge for 30 minutes. I made cute little pies but you can make one large one if you like. I cut circles of pastry and placed it in a shallow pie tin. Then place some filling in the centre and cover with another circle of pastry. Use some water to seal the edges and press the edges with a fork. Make slits in the pastry and brush with beaten egg or milk. Bake at 200degrees celsius until puffed and brown. These pies freeze very well. Bake when needed from frozen. Enjoy!
