Peri Peri Prawns
This makes a perfect starter but could serve as a meal on a green salad or savoury rice.
40 headless and deveined prawns, 100g softened butter, 2 teaspoons crushed garlic, 1 teaspoon paprika, 2 teaspoons cayenne or chilli powder, 1 teaspoon salt.
Slit the prawns and press them flat on a baking tray. Mix together the butter, all the spices and the crushed garlic. Spread the butter mixture on the flesh of the prawns. Pack it in tightly and be generous with the butter filling! Sprinkle over extra cayenne and bake at 200degrees celsius for 15-20 minutes or place under the grill for 5-8 minutes. Serve as a starter or with savoury rice as a meal. Enjoy!
