So easy you have to try it! And then serve it with whatever you like.


3 cups self-raising flour, 1 teaspoon baking powder, pinch salt, 3 tablespoons castor sugar, 250ml fresh cream, 1 can sprite, cheese, jam, whipped cream to serve.

Place the dry ingredients in a bowl. Add the fresh cream and HALF of the can of sprite. Mix together lightly. Add more sprite if needed to make a soft dough. The dough should be soft but not sticky. Do not knead or handle the dough too much. Turn the dough onto a board and spread with your hands until it's about 3cms thick. Then cut out shapes (I used a round cutter) and place close to each other on a greased baking tray. Keep bringing the off cuts together and cut out the shapes until all the dough has been used. Brush the top of the scones with beaten egg or milk and bake at 180degrees celsius for 20-25 minutes or until the tops are nicely browned. Place on a cooling rack to cool completely. Then slice in half and top each half with your favourite jam and fresh cream and fresh fruit. I like them topped with jam and cheese. Enjoy!
