I needed something savoury in a hurry for a tea time treat! These tarts will also be great as a breakfast dish.
400g puff pastry, 1 chopped onion, 125g chopped mushrooms, 125g chopped bacon, 5 egg yolks, 250ml fresh cream, 1/4 teaspoon cayenne, salt, pepper, grated cheese.
Fry the onions, mushrooms and bacon in a little olive oil. Season with salt and pepper. When cooked set aside to cool. Cut out the pastry to fit a greased muffin tin. Prick the pastry slightly with a fork. Whisk together the cream and egg yolks. Add the cayenne and 1/4 teaspoon salt. Pour the mixture through a strainer into a jug. Place some of the bacon mixture into each pastry. Fill with the egg mixture. Place a little grated cheese on top and bake at 180degrees celsius for 25-30 minutes or until the edges of the pastry turns light brown. Serve warm or at room temperature. Enjoy!
