Prawns & Savory Rice

My niece Prayanka is studying in Hungary, and is home after almost a year. So she requested something that tastes like Indian food but without the heat! I tried this rice and prawns and it turned out great. Also very quick and easy.

Ingredients

Basmati rice, saffron, prawns, crushed garlic, curry powder, chopped onion and carrots, corn, curry leaves, mustard seeds, cumin seeds.

Marinate the prawns in salt, crushed garlic and curry powder. Set aside. Boil the rice with salt and a few strands of saffron. Place some butter in a pan and fry the curry leaves, mustard seeds and cumin seeds for a minute. Then add the chopped onions, carrots and corn and fry until the onions are nicely browned. Add the cooked rice and stir through. Skewer the prawns onto wooden skewers that have soaked in water. Brush the prawns with melted butter and place under the grill for two minutes. Turn the skewers and brush the prawns with butter and place under the grill for a further two minutes. Serve the rice and place the skewers on top. Enjoy!
