I very rarely make a dish that is deep fried, but this recipe is so delicious, I have to share it with you! I used only chicken wings because that is everyones favourite, but you can use a variety of chicken pieces.


8 chicken pieces, 500g buttermilk, 1 cup flour, 2 teaspoons each cayenne, garlic salt and paprika, 1 teaspoon each pepper and thyme, oil for frying.

Soak the chicken pieces in buttermilk for a few hours, overnight is best. Place the flour and spices in a bowl and mix well. Take a piece of chicken from the buttermilk and place in the flour mixture. Cover every part of the chicken. Place on a rack and continue until all the pieces are coated in the flour mixture. Fry the chicken in hot oil until it is browned and crispy. Place the chicken on a rack over an oven tray. Place the tray in a 200degree celsius oven for 8-10 minutes. This ensures the chicken is cooked through. Serve with your favoutite sides and sauce. I make a sauce by combining mayonnaise and hot sauce (sriracha). Enjoy!
