Lamb Sliders

Perfect for cocktails but if you eat enough of them it becomes a meal! You can make any flavour you like but these Thai inspired ones were delicious.


500g lamb mince, 2 tablespoons Thai red curry paste, 1 tablespoon ginger and garlic paste, 1 chopped onion, 1 teaspoon salt, 1 cup chopped coriander, pickles (gherkins), sweet chilli sauce, soy sauce, 14 mini rolls.

Fry the onion in a little oil for a few minutes. Then add the curry paste and ginger garlic paste and cook for 5 minutes. Set aside to cool completely. Place the mince in a bowl and add the salt and chopped coriander. Add the cooled onion mixture and mix well into the mince. Roll balls of mince in your hands and flatten to make a burger patty. I got 14 burger patties which were quite thick. Slice the pickles to fit on the burger bun and make a sauce combining the sweet chilli with some soy sauce to taste. Cut the buns in half and butter both sides. Fry the burger patties in some oil. About 4 minutes per side. Remove from the oil and set aside for 5 minutes. Then assemble the sliders. Place a burger patty on the bottom half of the bun, add some sauce and top with a pickle. Cover with the top half of the bun and enjoy!
