Crumpets/Flapjacks

What's your favourite...Bacon or Blueberry?! Whatever it is try these light and fluffy crumpets.

Ingredients.

150g flour, 2 teaspoons baking powder, pinch salt, 30g castor sugar, 250ml milk, 1 egg, 20g melted butter, 1/2 teaspoon vanilla essence, 100g blueberries, butter, golden syrup, bacon, icing sugar.

Place all the dry ingredients in a bowl and lightly stir. Place the milk, egg melted butter and essence in a jug and whisk with a fork. Make a well in the centre of the dry ingredients and pour in the milk mixture. Stir with a wooden spoon until all the ingredients are combined. Do not over mix. Do not worry about the lumps. They make the crumpets light and fluffy! Fry the batter in a lightly buttered non stick frying pan on medium heat. I filled a 1/4 cup measure with batter and poured it into the pan. Carefully guide the batter into a circle. Fry for 4-5 minutes or until the edges turn brown then flip the crumpets over and cook until brown. Serve with butter, golden syrup and crispy bacon. Or if your prefernce is blueberries add 100g to the batter before frying. Gently fold the blueberries into the batter and fry as normal. Place the crumpets on a plate, drizzle with golden syrup, dust with icing sugar, and serve with vanilla ice-cream. Just in time for Valentines day breakfast!
