Plum Tarte Tatin

A few simple ingredients turns into a beautiful, delicious dessert or tea time treat!


8-10 plums, 1/2 cup sugar, 100g butter, 1 star anise, 1 cinnamon stick, 4 cardamom pods, 1 sheet puff pastry.

You will need a skillet or frying pan that can go into the oven at 200degrees celsius. Place the pan on medium heat. Place the sugar, butter and spices in the pan and cook just until the sugar melts. Cut the plums in half and remove the seeds. Arrange the plums cut side down in the pan in a circular pattern. Fill in the gaps with smaller cut pieces. Cook for 8 minutes. Remove from the heat and carefully remove the star anise, cinnamon stick and cardamom pods. Cut the pastry in a circle to fit the pan. I use the lid of the pan and cut slightly bigger than the lid. Carefully place the pastry over the plums and tuck in the sides. I use a wooden spoon to push down the sides of the pastry. Be very careful, and work fast as the pan is hot! Place the tart in a 200degree celsius oven and bake for 20-25 mintes or until the pastry turns golden brown. Remove from the oven and set aside for 15 minutes. Place your serving board or platter over the pan and flip over in one quick motion. Serve with whipped fresh cream or vanilla ice-cream. Enjoy! P. S. Replace the plums with apples or pears.
