Ice-Cream Cake

Perfect for Summer! Use your favourite things to make this decadent ice-cream cake.


2litre tub of good vanilla ice-cream, toasted sliced almonds, chopped soft dried apricots, chopped glace' cherries, chopped crystalized ginger.

Place the ice-cream in a large bowl.  Add the chopped fruit and nuts and mix thoroughly. Place the ice-cream in a 23cm loose bottomed cake tin that has been lined with cling film. Freeze for at least 4 hours or overnight. Turn the tin upside down onto a serving platter and release the ice-cream. Carefully peel off the cling film. Top with fresh fuit and chocolates. Whatever you like. Enjoy!                                                                              P.S. Add whatever you like to the ice-cream. Stir through some caramel or nutella. Add some crushed oreos and chocolate pieces. Smarties and jelly babies make a lovely kiddies cake.
