Tomato Soup

Another Winter warmer! Served with a grilled cheese sandwich!

Ingredients

1kg ripe tomatoes, 1 cup chopped basil leaves, 2 teaspoons dried thyme, 1 teaspoon dried oregano, 1 teaspoon salt, 2 teaspoons sugar, 1 teaspoon pepper, 1/2 teaspoon chilli flakes, 4 cloves garlic, 1 chopped onion, 1/4 cup olive oil.

Cut the tomatoes in half and place in a bowl. Add all the other ingredients and toss together well. Spread the tomatoes on a baking sheet, cut side up. Bake at 180degrees Celsius for 50-60 mintes. When the tomatoes are nice and soft remove the tray from the oven and scoop everything into a food processor. Blitz until the mixture is smooth. Empty the mixture into a pot and on low heat add some water, or vegetable stock, until you get the consistency you prefer. Cook on low heat for 10 minutes. Check for seasoning and add salt and pepper as required. Serve the soup with a grilled cheese sandwich. Enjoy!
