These meatballs are delicious on their own as a starter to a Thai meal, or served in a wrap or taco for a light lunch.


500g lamb mince, 2 tablespoons red curry paste, 1 finely chopped onion, 1teaspoon salt, 1 tablespoon ginger and garlic paste, green chilli, chopped fresh coriander.

In a little oil cook the onions and curry paste until the onions have softened. Set aside to cool. Place the lamb mince in a bowl. Add the salt, ginger and garlic paste, coriander, and green chilli (add as much green chilli as you like, or you can leave it out). Add the onion mixture and mix well. Shape the mixture into balls - I made 19 meatballs. Place on an oven tray and bake at 180degrees celsius for 15-20 minutes. Then place under the grill to brown. This takes only a couple of minutes so watch it carefully. Serve with sweet chilli sauce with a little soy sauce added. Or, I tried a Mexican/Thai fusion! I filled taco shells with the meatballs, topped it with the sauce and added chopped onion, tomato, cucumber and lettuce. It was absolutely delicious!
