This method of cooking vegetables really brings out their natural flavours. And it is so easy! Place it in the oven and turn on the timer!


I used red onion, butternut, marrow, patty pans, peppers and carrots.

You could use any vegetables of your choice, but I have found that brocoli and cauliflower do not work well for this kind of oven roast. Cut the vegetables into pieces and place on a baking tray. Sprinkle with salt and pepper and dried thyme. Pour over enough olive oil to coat all the vegetables. Toss the vegetables in the spices and olive oil and spread them in a single layer on the tray. Bake at 200degrees celsius for 45 minutes.
