Gourmet Mac n Cheese

An adult version Mac n Cheese! I added some garlic coriander prawns to my Mac n Cheese recipe. Comfort food with a twist!


1 kg prawns, fresh coriander, chilli flakes, crushed garlic, 500g elbow macaroni, 100g butter, 80g flour, 1 litre milk, 100g grated cheddar cheese, 200g grated mozzarella cheese, salt and pepper.

Remove the shells from the prawns and devein them. Leave a few with the shell on to decorate your dish at the end. Cut the prawns into small pieces and place in a bowl. Add salt to taste, 1 teaspoon of crushed garlic, as much chilli flakes as you like and some chopped fresh coriander. Fry the prawns in some butter for a few minutes and set aside. Put the pasta on to boil and start the cheese sauce. Melt the butter and then stir in the flour. Cook for a minute then add the milk, whisking constantly. Whisk the sauce until it comes to the boil and thickens. Add 1 teaspoon each of salt and pepper. Remove from the heat and stir in the cheese until it melts.(reserve some cheese for later). The pasta should now be cooked. Drain the pasta and add it to the sauce together with the cooked prawns. Stir everything together and place the mixture in an oven proof dish. Sprinkle over the reserved cheese and bake at 180 degrees celsius for 25 minutes. Remove from the oven and let the dish stand for 20 minutes before serving. Decorate the top with the whole prawns and serve with a side salad.
