This is an easy take on a Tiramisu! 


500ml fresh cream, 250g marscapone, 6 tablespoons castor sugar, 75ml brandy, 1 litre strong coffee, 1 packet boudoir biscuits, cocoa powder, 2 slabs chocolate.

Make the litre of coffee and set aside to cool a little. Add one tablespoon of the brandy to the coffee. Whisk the fresh cream and sugar until stiff. Add the marscapone and beat in slowly. Add the remainder of the brandy. Grate the chocolate and have the cocoa ready with a sifter. Now you can start assembling the Tiramisu. Divide the biscuits in half and dip the biscuits one at a time in the coffee and place them at the bottom of the dish. Spread half the cream mixture over the biscuits. Sift over some cocoa to cover the cream layer. Then sprinkle with some grated chocolate. Now repeat the layers. Biscuits dipped in coffee, then cream mixture, sifted cocoa and grated chocolate. Refridgerate for a few hours before serving. You could make it the day before serving. I have also made this with rum instead of brandy. Delicious!
