Cream Puffs

For as long as I can remember my Mum has made these little pieces of joy! Not so long ago I discovered they were not as difficult to make as I thought they would be. In fact they are rather easy to make.

Ingredients.

1 cup of water, 1 cup of flour, 125g butter, 4 eggs, pinch of salt, 500ml fresh cream, 1x80g slab of milk chocolate (or dark if you prefer).

Have your ingredients ready before you start. Pre - heat the oven to 200deg celsius. Sift the cup of flour into a bowl. Crack the eggs into another bowl. On medium heat place the water, butter and salt in a pot. Bring to the boil. Add the flour ALL AT ONCE and stir continously with a wooden spoon, until the dough leaves the sides of the pot. Cook the mixture for a minute and then place into the bowl of your electric mixer. Let the mixture cool for 5 minutes and then add the eggs SLOWLY, while continously beating the mixture. If you do not have an electric beater you can do this with a wooden spoon making sure you add one egg at a time, beating it in thoroughly, before adding the next egg. Beat the mixture until it is smooth and glossy. Spoon the mixture with a teaspoon onto a greased baking tray leaving enough space between them as they will spread and rise in the oven. Bake at 200deg celsius for 30 minutes, SWITCH OFF THE OVEN, and leave the puffs in for another 20 minutes. Remove from the oven, slit the puff in two and place on a cooling rack. When completely coolled spoon a little melted chocolate onto the top of each puff. (I broke up the slab into pieces and melted it in the microwave for 30 seconds). Beat the fresh cream with two tablespoons of sugar and one teaspoon of vanilla essence until stiff. Fill the puffs with the cream. Dust with icing sugar and enjoy!
