Fried Spring Rolls
These are easy to make and are delicious as a snack or a meal. I used all store bought items from Woolworths! I even used the breast meat from a rotisserie chicken. Or you could fry your own chicken breasts.
Finely sliced carrots, baby cabbage, spring onions, bean sprouts, and coriander. Grated ginger, finely chopped cooked chicken breast, chinese five spice, soy sauce. Spring roll pastry (store bought).
Place all the vegetables, grated ginger and chicken in a bowl. Add half a teaspoon of five spice and taste. Add more to taste. Add the soy sauce to taste. Toss everything together. Remove the pastry from its packaging and cover it with a damp cloth. Carefully peel off one layer and place it on a board. Brush it with water and place a second layer over.(I found two layers work better than one). The pastry should be in a diamond shape facing you. Place 2 tablespoons of filling close to the bottom of the pastry. Brush water on the two sides furthest away from you. Then roll, fold in the sides, and continue rolling. Make sure the tip is nicely sealed at the end. Use more water if you need to. Fry in oil and serve with a sauce made with sweet chilli sauce, soy sauce, grated ginger and chopped spring onions. Place the chilli sauce in a bowl and add the other ingredients to taste.
