Cheese and Chilli Muffins

These muffins are cheesy and delicious. I added some chilli and it turned out great. Serve simply with butter or it makes a great base for any topping of your choice. Try it topped with a fried or poached egg and crispy bacon, or humus, or pesto.

Ingredients.

200g flour, 3 teaspoons baking powder, 1/2 teaspoon salt, 250g sharp cheddar cheese, 250ml milk, 1 egg, 50g butter. Fresh green chilli or dried red chilli flakes.

First melt the butter and set aside to cool. Combine the flour, baking powder, salt, and grated cheese in a bowl. In another bowl beat the egg into the milk and then add the melted butter and beat. Add the milk mixture to the dry ingredients and mix with a spoon. The dough will be sticky and look very cheesy. Add as much chilli as you like. I divided the batter in two and added one finely chopped green chilli to half the batter. I added one teaspoon of dried red chilli flakes to the other half. (I honestly cannot choose between the two - they are both delicious). Spoon the batter into a greased muffin tin and bake at 180deg celsius for 25 to 30 minutes. Remove from tin and cool on a wire rack. Enjoy!

P.S. I also tried the recipe with some fried bacon added in and it was fabulous.
