I had some cherries and almonds left over after making my fruit cake for xmas, so I decided to make ice cream! Quick and easy and delicious!


100g whole almonds, 15g icing sugar, 100g red glace' cherries, 500ml fresh cream, 1 tin sweetened condensed milk, 1 teaspoon vanilla essence, 3/4 to 1 teaspoon almond essence.

Place the icing sugar and almonds in a dry pan and cook on low heat for 20 minutes. The icing sugar will melt and harden on the almonds. When cooled completely, bash with a rolling pin or in a pestle and mortar to break them up into pieces. Cut the cherries into pieces. Place the fresh cream and condensed milk and essence in a bowl with an electric beater. Whisk until stiff. Fold in the cherries and almonds and decant into a container. Cover and freeze overnight before serving. Enjoy!
