Prawn Salad

Perfect lunch or dinner for a hot summer's day!

Ingredients.

Prawns headless and deveined, crushed garlic, salt, curry powder, lettuce and rocket leaves, sliced cucumber, salad tomatoes, olives, feta cheese, salt and pepper, balsamic, olive oil.

Marinate the prawns in crushed garlic, salt and curry powder. For 35 prawns I used a teaspoon each of salt and curry powder and 2 teaspoons of crushed garlic. Make a salad starting with the lettuce and rocket leaves. Add  the sliced cucumbers and tomatoes. Add the olives and feta. Season with salt and pepper and drizzle with balsamic and olive oil. Fry the prawns in a little butter on high heat for 2 minutes on each side. Remove and place on salad. You could serve with croutons or garlic bread but I appreciated that this was carb free!
