I saw this recipe in the local newspaper and gave it a try. It turned out beautifully and tasted great.
Ingredients for the base.
120g softened butter, 90g castor sugar, 3 egg yolks, 30ml milk, 1 teaspoon baking powder, 200g flour, pinch salt.
Whisk together the butter and sugar. Add the egg yolks and milk and mix well. Add a little flour as well as this stops the eggs and butter from curdling. Add the sifted flour and baking powder. Spread the mixture onto a greased baking tray. Spread the jam evenly over the mixture and set aside.
3 egg whites, 1 cup sugar, 80g dessicated coconut.
Whisk the egg whites until stiff and slowly add the sugar whisking all the time. Fold in the coconut. Spread the egg white mixture on top of the jam. I place blobs of the mixture all over and then I spread it with knife - makes it easier to spread. Bake at 180deg celsius for 20-25 minutes. (the top will be slightly brown and crisp). Remove from the oven and leave in the tray to cool completely. Cut into slices and serve.
