Garlic Bread

This is a great accompaniment to any meal or delicious as a snack on its own!

Ingredients

1 loaf of Ciabata or Portugese bread, 100g butter, 1 tablespoon olive oil, 3 cloves of garlic finely chopped, 1 tablespoon chopped parsley, a pinch of dried oregeno, salt, pepper, mozzarella cheese.

Place the butter and olive oil in a frying pan on medium heat. When the butter has melted add the garlic and parsley, and cook for a minute. Do not burn the butter or the garlic. Remove from the heat and cool for a few minutes. Cut the loaf of bread in half and spread with the butter mixture. Slice the mozzarella and place on the bread. Sprinkle with salt, pepper and oregeno and bake at 180degrees celcius for 15 minutes or just until the cheese has melted and turned slightly brown.
