Custard Biscuits

This is my Mum's recipe. For as long as I can remember my Mum has been whipping up these biscuits in no time! I even used pink icing! So retro!


265 butter (softened), 3 tablespoons icing sugar, 3 tablespoons custard powder, 3 cups flour.

Whisk together the butter and icing sugar. Sift in the flour and custard powder and mix to form a dough. On a hot day you might use more flour and on a cold day you might use less. Make shapes with the dough - I like the long "sausage" type shape that I press down with a fork. Place on a greased baking sheet and bake at 180deg celsius for 15-18 minutes. Cool on a wire rack. When cool ice together with your favourite icing. I also often halve the recipe and it works well.
