Apple Tarts with Puff Pastry

I saw this technique on Facebook! Normally I would make simple squares but this looked easy and so pretty!


1 roll of store bought puff pastry. (I use Today), aprcot jam, cinnamon, 2 red apples.

Thaw out the pastry. Cut the apples in half and remove the core. DO NOT PEEL THE APPLES!! Slice the apples as thinly as you can. Place the slices in a glass bowl, cover with water and add the juice of half a small lemon. Cook in the microwave for 4-5 minutes. Remove and cool. Heat 2 tablespoons of jam in the microwave and set aside to cool. Remember everything must be cold whenever you work with puff pastry. Roll out the pastry lengthwise. Cut into 12 pieces along the width of the pastry. Spread each piece with some jam. Layer the apple slices so that they stick out the top of the pastry ever so slightly. Sprinkle with cinnamon. Now roll the pastry from one end to form a "rose". Pinch together the ends when completely rolled up. Place in a muffin tin and bake at 180deg celsius for 30-35 minutes. When coolled sprinkle with icing sugar before serving. I suspect these tarts will be heavenly served with a dollop of fresh cream! I have step by step photos attached.
