Cheesy Twice Baked Potatoes

These are great on their own or as a side dish. Today I served them together with roasted butternut and carrots and fried lamb chops.

4 large potatoes, milk, butter, grated cheese, salt, pepper, crushed garlic.

Wash the potatoes and poke through with a knife. Microwave until cooked. Remove from microwave and slit in half lengthways. Be careful to keep the halves intact as you will be using the skins later on. Scoop out the potato and place in a bowl. Be careful not to break the skins. Add some butter, milk, pepper and crushed garlic to the potatoes and mash together. Add the cheese and whisk together. Taste for seasoning and add salt as needed. Always add the salt last as you have no idea how salty the cheese will be. Add enough milk to make a smooth, light mixture. Fill each skin with the mashed potato. Microwave for 2-3 minutes until the cheese has melted through the mixture. Enjoy!
