Did one of your guests forget to tell you they're vegetarian? Happened to me! But no need to panic with this easy braised potato curry.


6 medium potatoes, 1 large onion, 1 teaspoon crushed garlic, half a teaspoon tumeric, green chillies, 2 teaspoons cumin seeds, salt.

Peel and slice the potatoes and place in a bowl of cold water. Slice the onion and braise in a little oil. Add as many chillies as you like. When the onions are almost done add the cumin seeds and cook for a few minutes. Add the garlic and cook for a minute. Add the drained potatoes. Add salt to taste and the tumeric. Stir and cook on low heat until the potatoes are done. Add tiny amounts of water if the potatoes stick to the pot. When the potatoes are done there should be no liquid in the pot. Garnish with fresh coriander. You could add sliced mushrooms in the last ten minutes of cooking.
