Deconstructed Eaton Mess
My sister Sheena had a last minute dinner for 12 so I made this dessert which is super easy and there is no cooking or baking required! I bought all the ingredients at the supermarket. Normally you would simply combine all the ingredients to make this but I tried something different and layered the ingredients in tall glasses. It looked and tasted amazing.
3 punnets strawberries, sugar, 1 large meringue, 500ml fresh cream.
Slice the strawberries and place in a bowl. Add 1 to 2 tablespoons sugar depending on the sweetness of the strawberries. Leave aside for half an hour. Break up the meringue into small pieces. Do not crumble as it will just turn to dust. Break carefully with your fingertips. Beat up the cream with 1 tablespoon sugar until stiff. Line up your glasses and start assembling the dessert. I started with meringue at the bottom, then strawberries, then cream, then strawberries, then meringue, then strawberries, then finish off with cream. I garnished with a slice of kiwi fruit. But you could use a strawberry or toasted almonds or grated chocolate. Whatever you like. Refridgerate until ready to serve.
