I found this recipe in a beginners cook book. So it is easy but scrumptious!

Ingredients for the Fish.

500g hake fillets - deboned and skinless, 1 cup flour, 1/3 cup cornflour, 1 egg white, 3/4 cup water, oil for fying.

Sift the flours into a bowl. Add the egg white and water and beat well until you get a smooth batter. Cut up the fish into bite size pieces. Dip each piece into the batter and fry until golden brown. It is best to deep fry the fish. Drain the fish on paper towels. Now make the sauce.

Ingredients for Chilli Sauce.

1 tablespoon oil, 1 tablespoon ginger and garlic paste, 1/4 cup tomato sauce, 1/4 cup hot chilli sauce (I used Nandos), 2 teaspoons sugar, 1 tablespoon soy sauce, 2 tablespoons water.

Place the oil in a pot or wok on medium heat. Add the ginger and garlic. Add the tomato and chilli sauce and cook for a minute. Add the remaining ingredients and cook for a minute. Toss the fish in the sauce on high heat until the fish is heated through and fully coated with the sauce. Garnish with chopped fresh coriander or spring onions. Serve with Basmati or Jasmine rice. I cooked a Chinese inspired meal for friends and made this together with my sticky wings, red curry stir fry, and hoisin chicken.
