Very easy to make but extremely yummy!
4 skinless, deboned chicken breasts, 500g frozen veg (I used Mc Cain Asian stirfry), 5 spring onions, 1 tablespoon ginger and garlic paste, hoisin sauce to taste (I used about 4 tablespoons), salt and pepper, chilli (optional), cashews and almonds.
Chop up the spring onions and keep some of the green bits for garnishing. Slice the chicken into small bite size pieces. In a wok or fry pan add a little olive oil. Fry the spring onions and chicken. Add salt and pepper to taste. Add the ginger and garlic paste. Add the hoisin sauce. Add the vegetables and keep stirring until cooked. Check for seasoning. Garnish with spring onion and roasted cashews and almonds. Serve with Basmati rice. I had guests for dinner so I also did some sticky chicken wings. It was a fabulous meal!
