Okay so I know this is a cooking blog but sometimes even the best cooks need to take a break and indulge in some store bought foods!!! Besides if you are in a hurry and maybe have some last minute guests you can still serve up a delicious meal with store bought items. In these recipes below I used a rotisserie chicken that I bought from Woolworths.
You will need a rotisserie chicken, 2 celery stalks, 3 spring onions. Chop up the chicken into small bite size pieces. Chop up the celery and spring onions and add to the chicken. To make the Curry Mayonnaise dressing you will need 1 cup of mayonnaise, 1 teaspoon curry powder, 1/2 teaspoon crushed garlic, 2 tablespoons chutney (I used Mrs. Balls), chopped coriander. Mix all the dressing ingredients together. Add salt to taste. You can add more or less curry powder as you like. Pour the dressing over the chicken and mix well. This is your basic mixture that you can use in several different ways. Today I made lettuce cups and wraps. You could also serve it as a starter or snack with crackers or crostini.
To make the lettuce cups use a firm lettuce like Romain lettuce. Fill each leaf with some chicken mixture and toast and chop up some cashew nuts and sprinkle on top.
To make the wraps I used slices of cucumber and tomato and shredded some lettuce. Place this on the wrap. Add salt and pepper. Add the chicken mixture and fold tightly.
