I am slowly obtaining my Mother's recipes and secret tips! This is so easy and everyone's favourite.
1 cup flour, 1 tablespoon sugar, 1 teaspoon butter, 11/2 tablespoons sesame (thill) seeds, cold water, oil for frying, sugar for dusting.
Place the flour and sugar in a mixing bowl. Add the butter and rub it into the flour with your fingertips. Add the sesame seeds and add enough cold water to make a soft dough. The dough must be soft but dry. Remove from the bowl and knead a few times on a floured surface. Roll out the dough as thin as you can. Keep the surface and your rolling pin well floured. Cut into circles (I used a tumbler!). Roll out each circle again to as thin as you can. When all the circles are done - I got 25 circles from my dough - fry them on a medium heat, turning frequently, until they are crisp and golden brown. (I use two forks to turn the dough in the oil). Remove from oil and drain on paper towels. (I line a colander with paper towels). Once they are cooled dust them with sugar. Enjoy!
P.S. You can double the recipe and it works really well.
