I saw this on a cooking channel and it looked so pretty I tried it out. It turned out to be absolutely delicious too!


Butternut and sweet potato cubes, beetroot cubes, feta cubes, rocket.

Dressing:- Olive oil, vinegar, salt, pepper and crushed garlic.

Season the butternut and sweet potato cubes with salt, pepper, and thyme. Drizzle with olive oil and roast in the oven at 200deg celsius for 35 to 40 minutes. I bought the cooked beetroot and feta from Woolworths. Start layering your salad starting with the rocket at the bottom. Add the roasted butternut and sweet potato. Add the beetroot and feta. In a bowl whisk together the dressing ingredients and drizzle over the salad. You could replace the rocket with cooked rice or rice pasta or cous cous and this could turn out to be a lovely vegetarian meal. Enjoy!
