Pastry Stars with Jam and Cream

For as long as I can remember my Mum has been making these delicious pastry stars. What always astounded us was how quickly she could whip them up! Now that I have learnt to make them I can assure you they are SO easy and quick to make. I use the Today puff pastry sheets.They are so convenient as there is no rolling required. All you do is defrost the sheets and cut out the stars.


2 pastry sheets, 1 egg, Jam, 1 fresh cream (250ml), 2 teaspoons sugar, 1/2 teaspoon vanilla extract.

Cut each pastry sheet into 16 squares. Make the stars. (step by step photos on next page). Place the stars on to a greased baking tray. Beat the egg and brush over the pastry. Be gentle - do not flatten the stars. Bake at 200deg celcius until a nice golden brown. Remove from oven and cool. Beat the fresh cream until stiff. Add 2 teaspoons of sugar and 1/2 teaspoon af vanilla extract to the cream. Place a small amount of jam on the centre of the star and top with the cream. Yummy!
