30 Minute Crunchies!
I found this crunchie recipe in a recipe book and it looked so easy so I tried it. Not only is it easy to prepare it is delicious too!
180g Butter, 2 Tablespoons Golden Syrup, 1 teaspoon Bicarb,
125g Flour, 180g Oats (I used whole jungle oats), 250g Sugar, 80g Dessicated Coconut, 100g Chopped Almonds.
Place flour, sugar, oats, coconut, and almonds in a bowl. In a pot on medium heat melt the butter and syrup. When it comes to the boil add the bicarb. (the mixture will froth and increase in volume at this stage. Add butter mixture to dry ingredients and mix well. (use your fingers). Tip the mixture onto a swiss roll pan (38 by 25cm), and press down evenly.
Bake at 170deg celcius for 15 to 20 minutes.
Remove from oven and leave in pan to cool for 4 minutes. Then cut into slices but leave in the pan for a further 10 minutes. Remove slices and cool on a wire rack. Quick, easy and delicious! (see photos on next page)
